Lemon Asparagus Ravioli

Measurements:

  • Package of your choice of Ravioli (the one pictured is my favorite)
  • 1 lemon 
  • 1/2 stalk of asparagus  
  • 1/4 cup crushed walnuts 
  • 2 1/2 tablespoons of butter
  • 1/2 cup parmesan cheese
  • Pepper
  • Lemon Pepper (optional)
  • 1/4 cup olive oil

Directions:

  • Boil pot of water and follow ravioli instructions 
  • Chop asparagus -- this time of round I added shredded brussel sprouts and it was actually really good. It helped to fill up the pasta dish with veggies.
  • Start to warm up 1 1/2 table spoon of butter in a skillet
  • Add in vegetables and sprinkle cracked pepper (and lemon pepper if you're a fan) and cover for around 6-7 minutes
  • Pasta should be ready to pour into the boiling water
  • Drain pasta
  • Add veggies into the pot the raviolis were in
  • Add remaining butter, olive oil, and walnuts in to the skillet (low heat) Squeeze lemon into the skillet as well
  • Let the sauce heat up for about a minute
  • Add ravioli back into the pot and sauce 
  • Stir in cheese

The ravioli is ready to be served! This dish takes around 15 minutes and is so easy! It has become my go to dish to make when my mom comes over for dinner. Tipsy would suggest pairing it with this wine.
